Ingredients
- 1 whole sea bass
- Potatoes
- Carrots
- Red onions
- Peppers
- Courgettes
- Seasoning (garlic cloves, rosemary, salt, pepper)
Method
Make sure the sea bass is gutted and trimmed before starting. Score the sides of the fish to release the flavour, and season inside with salt, pepper, garlic, rosemary and lemon.
Roast the sea bass in the oven for 8-10 minutes (depending on its size). Be sure to place some tin foil around the tail to avoid burning.
Baste with extra virgin olive oil until golden brown.
For the vegetables, put the potatoes, carrots, red onions, peppers and courgettes flashed on a hot pan with olive oil.
Oven roast the veg with garlic cloves, rosemary salt and pepper until golden brown.
Cherry tomatoes or vine tomatoes roasted with olive oil and seasonings until almost blistered, and garnish to finish.
