Cod Pizzaiola

Ingredients

- 1 cod fillet

- 1 tbs capers

- 1 tbs black olives

- ½ finely chopped onions

- Oregano

- Garlic oil

- Napoli sauce

- Spinach leaves

- Olive oil

Make sure your oven is set at 200°F.

Method

Place cod fillet in a very hot pan of olive oil, and season with salt and cracked black pepper. Blanch off both sides, then place in oven for 5 minutes.

Place capers, oregano, onion and olives in a pan of hot garlic oil. Season and fry for 3 minutes.

Place spinach leaves in a hot pan of olive oil and finely chopped fresh garlic. Season and fry.

Add your Napoli sauce to your capers mix and cook until it reduces down.

Place spinach neatly on plate. Place the cod on top, garnished with lemon slices and olive oil.

Finally, spoon your sauce around the dish, adding a sprinkle of parsley, and serve.
